Hibiscus Tacos
Recipe Instructions
Ingredients
1-2 handfuls dried Jamaica
(hibiscus) flowers
● 1/2 onion, divided
● 2 chiles guajillos
● 1-2 fresh chile serranos or
chile jalapeños
● 1-2 tomatoes
● Salt, cayenne pepper,
smoked paprika, cumin, and bouillon
(tomato or chicken) to taste
Instructions
Prepare Jamaica Flowers:
● Wash the Jamaica flowers
to remove any debris and major stem
parts.
● Boil the Jamaica flowers in
water until softened (about 20-25
minutes). Strain and set the water
aside for making agua fresca.
Prepare Sauce:
Optionally remove seeds before boiling, but they can be blended in as well.
In a pot, boil the dried chiles guajillos until softened (about 10 minutes). No need to
strain.
● Blend the softened chiles with 1/4 onion and some of the boiling water until smooth.
Cook Flowers:
● In a pan, heat oil over medium heat.
● Sauté the remaining 1/4 onion until golden brown.
● Add the strained Jamaica flowers to the pan and sauté for a few minutes.
● Add the blended chile sauce, season with salt, cayenne pepper, smoked paprika,
cumin, and bouillon to taste.
● Cook for 10-15 minutes or until the salsa is cooked through and has changed color.
4. Assemble Tacos:
● Warm tortillas on a comal.
